Two Days at Santa Ynez Ranch: A Rehearsal Dinner and a Family-Style Wedding

Santa Ynez Ranch is a private organic-vineyard ranch estate on Roblar Avenue with room to spread out, and this couple used two days of it. A rehearsal dinner for 60 on the Friday, a family-style wedding for 195 on the Saturday. We catered both.

The Friday was deliberately the opposite of the Saturday. Wood-fired pizza and one salad, served 7:00 to 9:00 to guests who arrived at 6:30. Four pizzas: margherita, hot honey and pepperoni, a vegetarian with mushrooms, arugula and caramelized onion, and a chicken with caramelized onion and goat cheese. A garden salad in balsamic. Four gluten free and dairy free pizzas were made for the celiac and vegan guests, so nobody at a pizza dinner was handed a plate of salad. Two servers and one bartender ran a beer and wine bar. That is the whole crew, and it is the right crew.

Saturday was a different operation. Our team was on site at 2:00 for a 4:00 start and off at 11:00. Guests were met with a welcome drink, then three passed appetizers through cocktail hour. The ceremony space was flipped to the reception while guests were at the bar.

Dinner went family style at 7:25. A farmers market salad of mixed greens and seasonal vegetables in a lemon buttermilk dressing, then shoyu braised short ribs among the mains sent to every table. Three sides went alongside: roasted farm vegetables with sea salt potatoes, mixed mushroom risotto, and a grilled corn salad with cilantro lime butter and Aleppo. Wine was poured tableside, a champagne toast was set, and churros closed the night.

The number to notice is three. Three full cocktail bars for 195 guests, plus tray-passed cocktails during the reception. One bar for that count means a line at 5:00 and a line again at 9:00; three means nobody plans their evening around a drink. It is the single most reliable place to spend money on a large wedding, and it is invisible when it works.

Two days at one venue also means two different service styles, two staffing plans and two bar programs, run back to back by the same team without a second load-in from scratch. That is the argument for putting your rehearsal dinner with your caterer rather than somewhere else.
