A Plated Wedding at Chateau Noland

Chateau Noland is a private estate in the San Luis Obispo hills, a stone chateau under conical slate turrets looking down over a lawn. That lawn is the whole story of this wedding, because it was both the ceremony space and the dining room, and it had to finish becoming the second one while 123 guests were at cocktail hour.

The ceremony started at 3:00 and was over by 3:30. Guests walked off to cocktail hour, and the lawn they had been sitting on had to become the room they would eat in. Seventeen tables, six round and eleven rectangular, went up on the grass where the ceremony chairs had been, dressed and set while the party carried on out of sight. Guests were seated at 5:00. Our bar team had been on site since 1:00 and the service crew came in two waves, at 2:00 and again at 2:45, which is how a flip gets staffed: enough hands to strike and build at the same time, arriving when there is something for them to do.

The menu leaned Spanish. Three passed appetizers opened cocktail hour, Central Coast ceviche with Calabrian chili, jamon serrano croquettes with paprika aioli, and tomato bruschetta with basil oil. Guests then sat to a first course of pluot, burrata and arugula with sea salt and a balsamic glaze, stone fruit still holding on at the front edge of autumn.

Three entrées followed, plated: local cod with chive beurre blanc, roasted lemons and potato purée; shoyu braised short ribs and shrimp with horseradish potato purée and roasted vegetables; and a mushroom risotto with truffle oil. The split across them was nowhere near even, which is the part that gets planned rather than guessed:

  • Shoyu braised short ribs and shrimp, 86 covers

Ten vendor meals went out alongside those, one of them built around a seafood allergy. There were no guest allergies on this event at all, which is rare enough to be worth saying out loud, and it meant the only dietary constraint in the building belonged to somebody working it. Vendors eat what the room is having, adjusted where it has to be.

Once guests sat, the clock got tight. Champagne was poured into flutes at the seating chart between 4:45 and 5:00, before anyone reached a table. Tableside wine service began as they took their seats, the salad went out at 5:20 during the first dance, and dinner followed at 5:30.

All of it travelled. Chateau Noland takes a complete field kitchen from us, and the load list ran well past the obvious: 240 pounds of ice for a full bar pouring espresso martinis and spicy margaritas, the Calabrian chilis for the ceviche, limes, and a stop at a farm stand for vegetables on the way up.

At 8:30 the churros came out with hot chocolate, Spanish style, which here meant sugar and nothing else. They were served from the bar trailer rather than from a station built for the purpose, which is a small decision with a real effect: no second build, no second crew, and the queue forms where guests already are. Strike began at 10:00.
